Job Interview Questions: When is the appropriate time to write notes at a job interview?

I have an interview later this week and I think i may want to write a follow up letter(thank you letter) to the company afterwards. But i 'know when is the appropriate time to jot down the hiring managers name, position, and etc. So, any suggestions?
