Could anyone provide me with excellent examples I could use at the job interview in relation to the following areas: Written communication, verbal communication, problem solving, attention to detail, organisational skills, customer service, flexibility, teamwork, initiative and IT.

You have to look at your own life and experience for that.

Think about any volunteer experience, involvement in school clubs or sports, or past work experience (paid or unpaid). Heck, even think about any situations where you had to work as a team on a class project. Unless you're really young you should have enough life experience to think of examples for everything. :)
